Southern Pineapple Coconut Cake. Once cake is baked, remove from oven, carefully stab top of cake with knife and pour pineapple mixture over top of warm cake. Assemble the Cake: Place one layer on a cake stand or platter.
Beat together butter, sugar, eggs and almond extract until smooth with mixer. Combine the wet and dry ingredients and blend well into a thick batter. Drain the pineapple in a mesh sieve or colander over a bowl so you can save the juice.
In a large bowl mix together flour, sugar, baking soda, eggs, vanilla and crushed pineapple (with juice) and beat until well combined.
Make the Frosting: Beat together cream cheese, butter, and sour cream until smooth.
Blend in the milk and coconut extract. Frost the top of the layer. Combine the flour, baking soda, baking powder and salt; add to egg mixture alternately with pineapple.
